Savoury Muffins -
Makes 6 Texas size muffins

INGREDIENTS

2 slices of ham

1 tbsp butter

2 tbps of herbs (not mint)

1 cup Self Raising Flour

1/2 tsp baking powder (not essential)

1/4 tsp salt

1 tbsp sugar

1 egg

1/2 cup of milk

1/2 cup grated cheese (I used parmesan and cheddar)

METHOD

Pre heat oven to 180C

Combine butter, flour, salt, sugar and baking powder and using your finger tips rub the butter into the dry ingredients until it resembles bread crumbs.

Add all other ingredients and mix until it just comes together - do not over mix muffins they just turn out hard and nasty.

Either grease a 6 hole muffin tin or line it wiht muffin cases. Divide the mixture into 6 cases and bake for 20-25 minutes. The tops should go a nice golden brown
