INGREDIENTS
 

1 freshly grated coconut

1 lime

1 tsp chilli powder (or less)

1 shallot, finely diced

METHOD

Combine all above ingredients together, adding lime and chilli powder to taste, mix gently with fingers to avoid squishing the concout together and loosing the moisture.

Keeps in air tight container for up to 4 days in the fridge, you can refresh with additional lime juice if it starts to dry out
